After arriving in the late afternoon and settling in at the Fairfield Inn & Suites by Marriott on Chincoteague Island for a weeklong August getaway, we were ready for an early dinner.  Our plan was to kick back at a nearby eatery that was a favorite of the locals, and had a loose vibe.  Fortunately, we didn’t need to travel far; a ten -second walk from our rooms was the front door of Chincoteague’s first and only waterfront hotel restaurant - The Jackspot.

Original Seafood Paella in Valencia, Spain

I've been experimenting a bit more than usual with spices recently, and so pungent Hungarian paprika has been very much on my radar, bringing back memories of a three-week stint in Hungary several years ago. This spice is used in cookery throughout much of the world, but boy do Magyars love them some reddish pepper powder – and in some cases in much stronger versions than the capsicum annuum you might use in your own kitchen.

Bánh Xèo With Prawns and Pork

½ (one-half) cup rice flour pancake mix
2 tsp turmeric powder
2 eggs
½ (one-half) tsp salt
2¼ cups water
1 cup coconut milk
3 stalks spring onion, diced
2 prawns, cooked and peeled (or 4 large shrimp)
2 oz cooked pork, thinly sliced
Salt and pepper as desired for prawns and pork
2 tsp oil per pancake
1 oz bean sprouts
3 leaves of lettuce
2 oz of Vietnamese fresh herb leaves (can be spring onions, basil, cilantro, mint, and/or lemongrass
