Of course, it is possible to rent a villa , rent a car and make daily trips.
In my opinion there are two nice starting locations:
NORTHERN
one is close to Gdansk
tour options: Full day: Gdansk-Sopot-Gdynia (cultural tour)
full day - Malbork Castle or Gothic Castles Trail
Kaszuby ( Polish Switzerland) Loop with local visits ( Upside down House) , nature and wildlife day
Elblag Canal
Torun ( a wonderfully preserved medieval city)
Former Stutthof Camp
Polish castles and places
lighthouses trail
etc, etc.
Another option:
SOUTHERN
is to rent a villa close to Cracow and make sample daily tours:
Cracow, Wawel Castle
one day in Polish mountains (Tatras) visit to the picturesque valleys or climbing in the Tatras
the wooden architecture trail
Auschwitz Birkenau and Schindeler's Factory Tour
one day trip with rafting
etc. there are abundent opportunities as POland is a highly diversified destination.
