Considered one of the best chefs on the island, Browne, 36. presents a menu which is sublimely complex and creative, and changes it every night so his guests, who sometimes stay for two weeks, “won’t get bored with it.” His specialty is plant-based food and he´s winner of the prestigious Nevis Mango Festival, an annual three-day event featuring dining experiences, cooking demonstrations and master cook-along classes conducted by international and local celebrity chefs. (For all that, Browne modestly says his own favorite food is “mac and cheese”).
