    Hi Allie,

    The main dish you have asked for the description of, is:

    Loin of Ontario Lamb and Lamb Shoulder Confit in a Moroccan-spiced jus, with Jerusalem artichoke purée, baby spinach, roasted corn, and a sprinkling of sheep’s-milk yogurt.
