Asados (barbecues) are a beloved Uruguayan tradition

Out in Uruguay´s ranch county you can take part in the tradition of the asado, open-air barbecues in which various cuts of beef, chicken and pork (as well as some funkier animal parts such as tripe and thyroid glands) are roasted over charcoal.
