this amuse bouche useing among other ingredients, the “tanya,” a local root vegetable; tamarind and carrot soup with walnut crumble; cocoa spiced seafood pasta; and deconstructed vanilla goat cheesecake with passion fruit curd, beetroot jelly and meringue, and mango and red wine sorbet.
