Albanian cuisine is hearty, rustic, and Mediterranean-influenced, blending Balkan, Ottoman Turkish, Greek, and Italian traditions. Expect grilled meats, fresh vegetables, savory pastries, local cheeses, olive oil, and aromatic herbs. Top dishes include the national dish tavë kosi (tender lamb baked in a creamy yogurt-and-egg sauce, with a lightly golden crust); byrek, flaky, savory filo pastry filled with spinach, cheese, meat, or onions, and fërgesë, a rich, comforting mix of peppers, tomatoes, and soft cheese, often served bubbling hot with crusty bread. It was all so delicious, I´m amazed and disappointed to have never heard of any Albanian restaurants outside the country (I´m sure there must be, just not in any places I know of).
