<p><br /> The platter that was set before me was covered with what resembled small piles of leaves from a fall lawn raking. The little brown, green and black heaps hardly invited sniffing, much less tasting. Yet sniff and taste I did.</p>
<p>Little did I know, before this introduction to “cheese wrapping,” that a gastronomic tradition in this corner of Italy is aging cheeses by encasing them in leaves. Nor was I aware that there are highly respected professional “cheese hunters” whose job is to seek out the best leaves in which to wrap locally made cheeses, and to know the exact amount of time each variety should be aged to bring out its best flavor. <br /> <br /> The opportunity to learn about one of the most unusual professions anywhere is among attractions of a visit to the <strong>Piedmont</strong> (<strong><em>Piemonte</em></strong>) region of northwestern Italy, with its capital and largest city <strong>Turin</strong>. But for me, its essence lies in the countryside, a lovely landscape of gently rolling hills blanketed by vineyards, and in small villages and towns that grew up around imposing stone castles in medieval times. Adding to the appeal are an enticing history and the fact that Piemontese food and wine, while not as well known as world-famous cuisines like that of <strong>France</strong>, in my opinion should be.</p>

<p><span style="font-size:14pt;"><strong><br /> Alba, Perched in the Piedmontese Alps<br /> </strong></span></p>
<p>Piemonte derives its name from the phrase <em>ai piedi del monte</em> (at the foot of the mountains), and the towering peaks of the <strong>Alps</strong> soar above the area (this mountainous splendor won Turin the 2006 <strong>Winter Olympics</strong>. And about an hour south of here, <strong><a href="https://www.visitlmr.it/en/route/alba/stroll-through-alba" target="_blank">Alba</a></strong> (population around 13,400), makes perfect home base for traveling throughout the region. Its nickname is “the town of 100 towers,” dating back to the 12th and 13th centuries, when aristocratic families competed to build ever-taller fortified towers to both provide protection from attack and demonstrate the family’s wealth and importance. While only four of the original structures still overlook the town, the name has stuck. Alba also boasts other enticing relics of its history. Among these are various medieval churches and other buildings; portions of the ancient city walls; and fragments of frescoes and other remnants of ancient Roman rule. There´s so much here that the old town is declared a <strong>UNESCO World Heritage Site</strong>.</p>

Roads wind through tiny towns, in places so narrow that when two cars meet, one must back up to a wider spot so the other can pass. Stone buildings line narrow cobblestone streets.Church steeples rise above a sea of red tile rooftops as if gazing out at the surrounding view. Many a hilltop is capped by an ancient castle, whose massive walls and turrets recall times of past grandeur.<br /> </p>

<p><span style="font-size:14pt;"><strong>Each Town Has its Own Intriguing Stories<br /> </strong></span></p>
<p>Along with their attractions, each town also has its own unique appeals and stories to tell. For example, <strong>Serralunga d’Alba</strong> is one of only 11 villages which may produce Barolo, ranked by many connoisseurs along with Barbaresco, as Italy’s most prestigious red wine.</p>
<p>Then there´s <strong>Grinzane Cavour</strong> and its 12th-century castle of the same name, which also have a strong connection with viniculture. Among exhibits in the fortress is the <strong><a href="https://www.castellogrinzane.com/en/enoteca-regionale-piemontese-cavour/" target="_blank">Piedmont Regional Wine Shop</a></strong>, which showcases and offers tastings of a sampling of the area’s vintages, plus several grappa brandies. Also intriguing is the ¨Masks Room,¨ whose soaring ceiling is painted with portraits, crests and a series of fantasy monsters and allegorical creatures that range in countenance from droll to macabre.</p>
<p>One proud claim to fame of <strong>Cherasco</strong> - founded in 1243 - is that <strong>Napoleon Bonaparte</strong> described it as “<em>le plus beau coin d’Italie</em>.” Even those who might not agree that the town is “the most beautiful corner of Italy” can appreciate the original star-shaped Roman bastion and the medieval architecture that abounds there. The town’s elegant porticoed arcades continue to protect pedestrians from sun and rain, as they did in the past. Among the sumptuous palaces is the early-17th--century <strong><a href="https://www.visitlmr.it/en/sightseeing/cultural-heritage/palazzo-salmatoris" target="_blank">Palazzo Salmatoris</a></strong>, where the Savoy family, which ruled northern Italy from the early 11th century (and went on to rule all of Italy) spent many a summer holiday. A graceful “Triumphal Arch” (above) was donated by a citizen to give thanks that the plague which wracked the region in 1630 spared the residents of Cherasco.</p>
<p>One larger place also very much worth a visit is <strong><a href="https://visit.asti.it/en/informations/tourist-services/" target="_blank">Asti</a></strong> (pop. just over 74,000), which traces its origins back to a Roman fortified camp built in 124 BCE. These days it´s the commercial capital of Piemontese wine - some 40 percent of the region´s production takes place in the surrounding countryside, and it´s also known in its own right for the sparkling white Asti Spumante - as well as truffles. Here, too, you´ll find remnants of ancient Roman walls and a UNESCO World Heritage medieval core. And by by the way, this is another ¨city of a hundred towers,¨ of which 15 remain and three are especially notable.</p>

<p><strong><span style="font-size:14pt;">Besides Its Wonderful Wine, Piemontese Food is Fantastico!</span><br /> </strong></p>
<p>Anyone who travels here is sure to leave with an appreciation of the importance of both food and wine in the lives of its people, and probably with a few extra pounds as well. Cheese and truffles - especially white truffles - hold a place of honor on many a dining table and in the local cuisine and culture.</p>
<p>Cheese-making (above) in particular is closely identified with the region, having flourished there since the first century CE. Many farmers continue to follow traditional family recipes, which often call for a mixture of milk from cows, sheep and goats.</p>

<p>And a visit with a “cheese hunter” turned out to be one of the more unusual experiences of my trip. <strong>Gianni Cora</strong> (above) - whose family specializes in robiola, a soft cheese made from cow´s, goat´s, and sheep´s milk - described the local tradition of “maturing” cheeses by wrapping them in various kinds of leaves to both preserve and flavor them. The foliage which is employed for those purposes includes leaves from chestnut and fig trees, as well as cabbage, cauliflower and other vegetables. I also encountered - but chose not to sample - cheeses wrapped in grass, tobacco leaves and goat hides. Gianni reported that each year he gathers and uses more than 100,000 chestnut leaves alone. (I didn’t inquire how he knew the number.) Explaining that about three dozen neighbors share his unusual profession, he claimed – without embarrassment at the pun – that he is recognized as the “Big Cheese” among them. </p>
<p>It had not taken long after my arrival at the destination to observe and experience first-hand that the Piemontese people are as serious about enjoying cheeses as Gianni is about doing his best to make sure they taste as delectable as possible. Most restaurants serve a wide selection of locally produced types. I observed diners discussing their selections with the server, asking for small samples before ordering, then nibbling on their choices with an enjoyment that was obvious even from across the room.</p>
<p>Enjoyment of Piedmont’s magnificent scenery, ancient towns and intriguing history might not be demonstrated so clearly. But this corner of Italy has much to recommend a visit to savor the flavors and many other attractions it has to offer. </p>

<p>This charming boutique property on a former 19th-century lime plantation, has a new chef, and he’s a treasure. From <strong>England</strong>’s <strong>Lake District</strong>, Liam Haddow’s lilting English accent adds an extra touch of class to the menus he presents. He trained under the legendary <strong>Len Unwin</strong>, which may account for his special prowess with desserts. (Unwin is known for his gorgeous spun sugar and chocolate creations.) But we’re getting ahead of the meal.</p>

I enjoyed a tender rack of lamb in a rich sauce made from pigs’ feet reduction and three kinds of red wine. Dessert was a piña colada panna cotta with pineapple, chili and lime salsa. An extra fudge brownie came too, and although not needed, was gobbled down. All this in a restaurant that looks out on the Caribbean Sea and the island of <strong>St. Kitts</strong> in the near distance, with a tropical moon overhead. A dreamy dinner experience. <p>This outdoor restaurant is so close to the Caribbean Sea it is practically in it. Drift is one of two spectacular restaurants owned by <strong>Mark Fuller</strong>, originally from <strong>British Columbia</strong>. Its young chef Nicole Merchant, as so many on Nevis, made her bones at the <strong><a href="https://www.fourseasons.com/nevis/" target="_blank">Four Seasons</a></strong>, the largest and oldest resort still in operation on the island. <p>This indoor restaurant is so named because you can see the moon, stars and anything else in the sky from a table in the center, surrounded by royal palms, under an open ceiling. Its chef Kamal DCosta “knocked on the door one day and asked if he could work here,” explains Mark Fuller, the owner. “I told him I had 12 friends coming in that night. Make a multiple-course dinner for them using only what I have already in the kitchen,” I said. “He created a meal at the end of which all the diners stood up and gave him a standing ovation. I hired him on the spot.” Originally from <strong>Kolkata</strong> (aka <strong>Calcutta</strong>), <strong>India</strong>, he first learned how to cook from his chef grandfather (and worked with him at a <strong>Holiday Inn</strong> in <strong>Mumbai</strong>, aka <strong>Bombay</strong>), and studied cooking in India, then French and Italian methods in <strong>New York</strong>.</p>

<p><br /> When you ask his philosophy of food, DCosta replies “Keep it simple, don’t add extra spice, and don’t make diners feel stuffed.” He loves the local hand-caught lobster (above, grilled) as well as paté of all kinds, has his own method of making butter (which he insists is healthier than the normal kind) and is a proponent of an Ayurvedic lifestyle. From his menu Tim enjoyed a slow roast pork pate on garlic toast and a vegan ensemble. I chose fire-grilled, cinnamon-flavored local lobster garnished with star anise and accompanied by saffron rice. Luna is decorated with the large realistic paintings of monkeys and other Nevisian fauna done by the owner´s wife, artist <strong>Vikki Fuller</strong>.</p>

<p>Smith says she named the restaurant to reflect her state of mind — and the electric energy, the pulsating music, the swirl of colors and the overflowing guests that are a part of the restaurant are indeed a bit “bananas.” The restaurant sits at the top of a steep hill on property she purchased after moving to Nevis from <strong>Great Britain</strong>. “Starting a restaurant was the most challenging thing I’ve ever done, save for the time I ice-skated topless in <strong>Korea</strong>,” she smiled. Smith turned her restaurant into a nightly carnival that entices people to drive the winding bumpy road up and around to get to it. When they arrive, they climb even higher on foot through a garden lit by flaming torches.</p>

Some say dining here is like eating in a tree house. True or not, it’s as if you’re at a party no matter what night you choose. At the end of our dinner, we told our waiter that Smith seemed like a force of nature. She paused, smiling. “A hurricane,” she said.</p>

Following a round of golf at Four Season’s 18-hole course (the only one on the island), we had a memorable lunch overlooking <strong>Pinneys Beach</strong>, with a picturesque schooner moored in the distance.</p>

Like a child getting a new toy, I get excited when I discover new foods and ingredients. My mind feels ‘at home’ when it’s in the process of creating in the kitchen.”</p>

<p>Built on and incorporating the ruins of an old sugar estate, this is one of Nevis’ most exclusive properties (<strong>Princess Diana</strong> once brought young <strong>William</strong> and <strong>Harry</strong> here because of its privacy and elegance). Its restaurant 750 — the number of feet it sits above sea level — is considered one of the best on the island, as is its chef, <strong>Halva Browne</strong>, 35. Browne, modestly says his own favorite food is “mac and cheese,” but his menu is sublimely complex and creative. He changes the menu every night so his guests, who sometimes stay for two weeks, “won’t get bored with it,” according to the hotel owner. </p>

<p><br /> Browne, whose specialty is plant-based food, is a winner in the prestigious <strong>Nevis Mango Festival</strong>, an annual three-day event featuring dining experiences, cooking demonstrations and master cook-along classes conducted by international and local celebrity chefs. His amuse bouche on the night we were (above) there used, among other ingredients, the “tanya,” a local root vegetable. Be sure to try his tamarind and carrot soup with walnut crumble; his cocoa spiced seafood pasta; and the deconstructed vanilla goat cheesecake with passion fruit curd, beetroot jelly and meringue. Not to be misses, also, is his mango and red wine sorbet.</p>

<p>The luxurious Golden Rock Inn, another historic sugar plantation turned into private cottages set amidst 40 acres of stunning tropical gardens, offers a menu that brings travelers from all over the world. Head chef James Eaton, 42, apprenticed under German, French, Japanese and South African chefs. That may account for why his international clientele feel so at home. “You must have passion to be a good chef,” he notes, and his cosmopolitan cuisine reflects it, including a particular specialty of the Rocks, the creation of the resort’s owner, artist Helen Harden: “Helen’s Moroccan Chicken” with green cracked olives, house preserved lemon, and couscous.</p>

<p>This passion extends even to breakfast: Eaton’s eggs Benedict with local homemade brioche, sautéed spinach and Creole hollandaise sauce can come with either local wahoo or Canadian bacon, while his pancakes (above) are flavored with spiced rum berry compote and creme Chantilly. For dinner we both especially enjoyed a perfect pan-seared rack of lamb with rosemary baby potatoes and cauliflower puree. The meals at Golden Rock can be taken outdoors in a stone gazebo next to a koi pool or at a private table in the tropical garden in addition to the main restaurant, an outdoor tented site overlooking the koi pool. The staff will even carry it up a hill for you to have at the swimming pool.</p>

<p>Sunshine’s may not be the fanciest beach restaurant on Nevis, but it’s arguably the most popular, primarily because of its charismatic, flamboyant owner, Llewellyn “Sunshine” Caines. Known throughout this small island, the fifty-ish Caines left his native St. Kitts in 1991 and came to Nevis on a friend’s boat, bringing with him $100 and a barbecue grill, which he set up on Pinneys Beach near where the Four Seasons is now. He learned to cook from his grandmother, but otherwise is self-taught.</p>

To partake of it — and all the other hearty Caribbean food served here— celebrities such as <strong>Meryl Streep</strong>, <strong>Wayne Gretzky</strong>, <strong>Oprah Winfrey</strong>, and <strong>Al Sharpton</strong> have found their way to this colorful joint, where the good cooking, good music, good service and casual atmosphere make everyone happy.</p>

On the night we were there, 50-year-old <strong>Karen Belle</strong> was all of these —and never lost her infectious smile throughout our stay. Passion Bar & Grill is a transformed mini mart with a corrugated aluminum roof and a series of add-on dining rooms. Belle, the baby of 12 children, was a waitress for 11 years at —where else? — Four Seasons, vowing to “have my own place by the time I turn 40.” And she did. </p>

When you dine at Passion you will be getting the essence of West Indian cooking, which she learned from her mother and grandmother: Creole fish, honey mustard ribs, baked chicken wings and stewed oxtail will almost certainly be on the menu - and all delicious!</p>

<p>The exclusive dining experience on the Princess <em>Discovery</em> is unlike any other I have been a part of during my travels.</p>
<p>"360: An Extraordinary Experience" is dining immersion making one feel like you’re sitting in the Greek countryside with olive trees or smelling the fragrance of lavender in France. Thanks to Princess Cruises, I savored this time with fellow bloggers.</p>
<p>I immediately became captivated with the experience when I heard beautiful music played by two violinists and felt transported to Europe. Entering the tucked away area, it was evident this would not be the usual cruise ship dining room. Dimly lit for a reason, wrap around colorful pictures on the curved walls soon emerged. </p>
<p>Upon entering the room, each person was escorted to a preassigned seat where the sensory show was unfolding. 20 people are allowed by reservation only and typically for suite guests. The seating is U shape, and every diner sees their name projected on the table somewhat like a placemat which adds to the personal welcome.</p>
<p>Maître Rafael introduced himself and like clockwork, servers began to bring in drinks and food with no time to sit idle. Actress and model Brooke Shields narrated the panoramic journey making you feel as if you were sailing on the ship to each destination. The accompanying taste of foods and sips of wines transported each person into the countries using immersion video with sights and sounds. Vivid pictures of Greece with olive oil, Italy’s pasta, lavender in France and a Spanish filet of beef made the dining journey look very edible. And it was, as each plated item matched the culinary theme for the country.</p>

<p>Part of the 90-minute dining adventure is not knowing what to expect next until you’ve finished the previous course and anticipated what could be next. The foods are prepared to perfection and no additional condiments were needed.</p>
<p>Table décor also represented the countries. I touched the honeycomb plate with bees and the bees moved around. I was glad the honeybees were not real as they swarmed around my French dessert with jellied bees. </p>

<p><br />Some places are more than a destination, and topping that list is <strong>Provence</strong>. This <strong>Maryland</strong>-size region, nestled in <strong>France</strong>'s southeastern corner, immediately immerses visitors in a setting and lifestyle that cajole and captivate. And while the glitzy French Riviera has many advocates, my wife Fyllis and I limited our recent stay to what we what we call the “real” Provence. </p>
<p>It’s an area of tiny towns and even smaller villages. Mountain chains overlook valleys blanketed by a checker board of vineyards, orchards and olive trees. </p>
<p>Against this backdrop emerge the jewels of Provence that lie at the heart of its charm. These are history-rich hilltop villages of stone buildings crowding narrow, winding cobblestone streets and walkways, and compact tree-shaded squares lined by inviting sidewalk cafes.</p>

<p>These casual brasseries represent one of four other factors that, to us, make a visit to this corner of France more than memorable. I refer to history, food, wine and people.</p>
<p>Phoenicians who arrived six centuries before the birth of Christ were followed by Greeks, and later by Romans. During the time that Rome held sway over this swath of fertile land, from about 100 BC until disintegration of its empire five centuries later, Provence became one of the realm’s wealthiest provinces. In the Middle Ages, the region was invaded by successive waves of fierce marauders.</p>
<p>Evidence of pages from this colorful past abound. In the town of St, Remy, remains of the once-grand Greek city of Glanum stand near a Roman triumphal arch and funerary monument. The two-tiered Roman amphitheater in Arles, which was built in 90 AD, once held more than 20,000 spectators who gathered to watch chariot races and gladiators engaging in bloody hand-to-hand combat.</p>
<p>Some of these well-preserved Roman antiquities continue to fill a variety of functions. For example, the arena in Arles hosts bull fights, concerts and other events, while plays and musical productions take place in Roman theaters in Orange and Vaison-la-Romaine. </p>
<p>Much of France’s renowned and well-deserved reputation for fabulous food and wonderful wine is based upon what is grown, made and cooked in Provence. It didn’t take long for Fyllis and me to appreciate each mouthful and every sip.</p>

<p class="graf graf--p" style="text-align:left;"><br />The vegetables on our plates, often seasoned with ubiquitous garlic and local olive oil, had recently been grown in fields close by, as had fresh-from-the-farm fruit. Regional specialty sweets like artisanal chocolate, candied fruits and nougat tempt the palate and challenge your next step on a scale.</p>
<p class="graf graf--p" style="text-align:left;">Restaurant food portions are large, and then some. One evening, after we ordered a steak to share at an outdoor café, the waitperson suggested, only partly in jest, that we move to a larger table which could accommodate the oversized slab of delicious meat.</p>
<p class="graf graf--p" style="text-align:left;">Wine has been made in this region for at least 2,600 years, first by the Greeks and then Romans. Provence is known predominately for rose wine, which accounts for about half of the local production. Some oenophiles also praise its spicy, full-flavored reds. As travel journalists, Fyllis and I felt obligated to sample both.</p>

<p><br />Even given these pleasures of the past, and palate-pleasing flavors of food and wine, we found the people of Provence also to be among its most endearing treasures. Topping the list is their genuine friendliness.</p>
<p>At times when we struggled with our elementary school-level French, they used their elementary school English to offer help. When we encountered a car problem, an off-duty policeman cheerfully came to our rescue. If we looked lost while walking in a town, a local passer-by invariably offered assistance.</p>
<p>The genuine friendliness and welcoming attitude of the Provencales, as inhabitants are known, might be reason enough to visit this inviting corner of France. Given the many other enticements, it’s no wonder why the destination is placed high on many a travel bucket list.</p>
<p>Another factor that contributed to our enjoyment, and immersion in local culture and customs, was that we went there with Untours, a company with which we have traveled the past. It’s motto and goal, to enable participants to “Live like the locals,” are perfectly suited to a stay in Provence.</p>

<p>We stretched our budget by enjoying some meals at our “home away from home,” and I don’t mean a hotel room. That’s a “no-no” for the company. Instead, where you stay becomes part of the travel experience.</p>

<p>During previous Untours trips, we were put up in apartments on a working farm, at a winery and overlooking the canals of Venice. In Provence, we stayed in a beautifully renovated century-old house in Pernes-les-Fontaines, a fortified Medieval town named for 41 ornate public fountains that began furnishing water to inhabitants in the 17<sup>th</sup> century.</p>
<p>The house interior is a tressure-trove of reminders of its history and that of Provence. Wall hangings and knickknacks display artifacts representing both the past and present-day life. In the enclosed yard, olive trees and a grape arbor hint at the gastronomic pleasures that abound. </p>

<p>Admittedly, inflight dining has not gotten a lot of love over much of the course of commercial aviation's history. Actually, early in that history, in the 1930s, multi-course meals were cooked onboard. However, as the postwar demand for flights took off in the 1950’s and 60’s and aircraft sizes (and therefore passenger numbers on each flight) grew, this soon proved impractical, and the complexity of cooking for hundreds of passengers in a tight space within a limited time frame prompted airlines to switch to premade meals, heated in onboard galleys.</p>

<p>Nowadays, inflight meals for all classes of service are prepared in an elaborate process on terra firma according to <a href="https://www.academia.edu/28264120/World_Food_Safety_Guidelines_for_Airline_Catering" target="_blank">World Food Safety Guidelines for Airline Catering</a> by a handful of international catering companies, including <a href="https://www.gategroup.com/en-gb/brands/gate-gourmet/" target="_blank"><strong>Gate Gourmet</strong></a>, <a href="https://www.lsgskychefs.com/" target="_blank"><strong>LSG Sky Chefs</strong></a>, and <strong>Austria</strong>-based <strong><a href="https://www.doco.com" target="_blank">Do & Co</a></strong>, which has operations at 31 sites worldwide, including <strong>Madrid</strong> and <strong>Barcelona</strong> airports, where it services <strong>Iberia</strong>'s fleet. The catering chefs meet with airline representatives, with a lot of discussion and debate before a new menu is agreed upon and implemented. Decisions on menus and recipes also vary according to route to cater for international and regional tastes, as well as class of service (premium vs. economy).</p>

<p>Regardless of all that, another eternal challenge for menu designers is the fact that high altitudes suppress the functioning of the taste buds and thus our enjoyment of inflight meals. <strong>Guillaume de Syon</strong>, a history professor at <strong>Pennsylvania</strong>'s <strong>Albright College</strong>, has studied the history of airline meals, and suggests that pressurisation can make passengers thirsty and food taste "dry and flavourless” as a result. Considering it’s such a small country (thirteen times smaller than <a href="https://minimalistjourneys.com/category/travel-journeys/explore-the-world/oceania/new-zealand/" target="_blank">New Zealand</a>), there is a surprising variety of traditional Slovenian dishes you can sample here. According to our walking tour guide in Ljubljana, Slovenia has seven traditional regions, and each region has its own (take on Slovenian) cuisine.<br /></p><p>If you’re a foodie you could spend a long time travelling around Slovenia and sampling all the delicious dishes the different regions have to offer. Our article though will concentrate on western Slovenia. Why? Simply because this is the area we visited and where we ate our way around – literally.<br /></p><p><span style="font-size:12pt;"><strong>What Is Slovenian Food Like?</strong></span></p><p><br /> Part of the Austro-Hungarian empire (until World War I) and Italy (which annexed western Slovenia after the war), you can find Austrian, Hungarian and Italian influences in Slovenian cuisine. It’s hard to pin down dishes that originated in/around the Slovenian capital but the two we would suggest you try when in Ljubljana are <em>štruklji</em> and <em>potica</em>.</p><p><br /> <em>Štruklji</em> (Slovenian dumplings) come in all variations – savoury or sweet; round like a ball or like slices of rolled dough; on its own or as a side dish. And each region (or even town/village) has its own version yet again. A great place to sample (quite) a few different varieties is <a href="https://www.moji-struklji.si/en/moji-struklji-dumplings/" target="_blank">Moji Štruklji Slovenije</a> (My Dumplings of Slovenia) in Ljubljana.</p><p><br /> <em>Potica</em> on the other hand is a traditional Slovenian holiday cake. It’s not too sweet and reminded me a bit of <em>stollen</em>, a holiday cake my grandmother used to make. Obviously, there are as many recipes as there are Slovenian (grand)mothers but if you want to make one at home, here is one recipe to check out.</p><p></p><p><a href="https://minimalistjourneys.com/traditional-food-slovenia/" target="_blank"><img src="{{#staticFileLink}}9009396461,original{{/staticFileLink}}" class="align-center" width="750" alt="9009396461?profile=original" /></a></p><p><span style="font-size:12pt;"><strong>Traditional Dishes from Gorenjska</strong></span></p><p><br /> Gorenjska (Upper Carniola) is the area northwest of Ljubljana, known for picturesque Lake Bled and the winter sports centres Kranjska Gora and Planica. If you (only) make it to Bled, make sure you stop at the Park Hotel for Bled’s signature dessert <em>Blejska kremšnita</em> (cream cake). On the savoury side, while Austrians argue that the <em>Kranjska klobasa</em> (Carniolan sausage) is Austrian, the region it originated from lies in present-day Slovenia and is a definite MUST-TRY when you visit the region. Another sausage you might want to try is Gorenjska’s version of <em>krvavica</em> (blood sausage) - it might sound gross to some to eat sausages made from boiled pig’s blood, but it’s actually quite delicious. If you're vegetarian, don't worry: Slovenia also has plenty of non-meat dishes. For example, you might like <em>Gorenjski krapi</em> (buckwheat ravioli); we tried them with a delicious mushroom sauce during a roadside stop along the serpentines leading up to Vršič Pass.</p><p></p><p><a href="https://minimalistjourneys.com/traditional-food-slovenia/" target="_blank"><img src="{{#staticFileLink}}9009396678,original{{/staticFileLink}}" class="align-center" width="750" alt="9009396678?profile=original" /></a><br /> <br /> <span style="font-size:12pt;"><strong>Traditional Dishes from Primorska</strong></span><br /> <br /> Primorska (Slovene Littoral) is the westernmost region of Slovenia. Bordering Italy and under Italian control between WWI and the creation of Slovenia as part of Yugoslavia after WWII, it might be no surprise that this region has its own varieties of pasta and prosciutto. Make sure you try <em>Kraški pršut</em> (ham from the south-western Slovenian Karst region, cured without heat or smoke) from niche company Slovenia Food, and <em>bleki</em> (square pasta) – with a delicious sauce or in a soup – when you visit the region.</p><p><br /> A here's a question: Did you know that Slovenia is home to more than 500 brown bears? The dense forests of the country make a great habitat for them bears (as well as for wolves and lynx). The reason I mention it is because while you can observe brown bears in their natural habitat, especially in Southern Slovenia (the regions of Notranjska and Dolenjska) you can also sample bear on a plate: Primorska is known for its game dishes, including venison, <em>divjega prašiča</em> (a wild boar dish we tried in Kobarid), and bear, which is hunted under strict regulations to keep their numbers under control.<br /></p><p><span style="font-size:12pt;"><strong>How Do I Recognise Traditional Slovenian Cuisine in a Restaurant?</strong></span></p><p><br /> The most authentic Slovenian restaurants proudly use the markings of local heritage: "Taste Ljubljana", "Taste Central Slovenia", and "Gostilna Slovenija" (top-quality regional dishes). Kranj has its sausage, Bled has its cream cake… and Tolmin has its own version of <em>frika</em>, ia hearty shepherds' dish which looks like a Spanish tortilla. <em>Tolminska frika</em>, however, tastes very different, being made with 1/3 potatoes and 2/3 cheese - you can take a guess which flavour overweighs. For a low-cost bistro experience, try <a href="http://www.hitrazlica.com/?page_id=156" target="_blank">Hitra Žlica</a> and/or <a href="http://restavracija-oe.si/" target="_blank">Orient Express</a>. We stumbled upon the latter by chance, following some office workers as they headed out for lunch. A bit hidden in the basement of an office building, it serves cheap, (almost) home-cooked meals, and the staff are super friendly. If you happen to be in town on a Friday, check out <a href="http://www.ljubljana-slovenia.com/open-kitchen-ljubljana" target="_blank">Open Kitchen</a> next to the cathedral, where some 40-plus local restaurants offer their dishes at discounted prices (the kitchen isn't open when it rains, though). The portions were so large that we had the leftovers for dinner. A relaxed atmosphere, delicious food and friendly service… what more could you ask for?<br /> <br /> <br /> <span style="font-size:12pt;"><strong>What Else Should You Try While in Slovenia?</strong></span></p><p><br /> If you’re visiting in the summer and you venture out into nature (which would be a sacrilege not to), chances are you’re passing shrubs of wild berries (raspberries, blueberries, strawberries, …). Nothing tastes better during a hike in the beautiful Julian Alps than freshly picked berries (apart from some fresh bread with cheese and prosciutto, and a cool beer maybe, but who likes to carry all of that up to the mountain).</p><p><br /> Love honey? Well, make sure then you try some while visiting Slovenia. You’re spoilt for choice, as seemingly everyone makes their own honey. The Carniolan honey bee is native to Slovenia.
