The fish pieces are placed in a large cauldron of boiling water with red potatoes. When the fish oils rise to the surface, the Master Boiler tosses kerosene on the flames, causing a boilover and spilling the fish oils over the side. This is very dramatic which is why you need to arrive early to observe the process.
